Java for OS X 10.6 Update 13 (Java 6 Update 41)
[Update: As of 3/4/2013 now "Java for Mac OS X 10.6 Update 17" with Java 6 Update 65.]
"About Java for Mac OS X 10.6 Update 13
Java for Mac OS X 10.6 Update 13 delivers improved security, reliability, and compatibility by updating Java SE 6 to 1.6.0_41.

On systems that have not already installed Java for Mac OS X 10.6 update 9 or later, this update will configure web browsers to not automatically run Java applets. Java applets may be re-enabled by clicking the region labeled "Inactive plug-in" on a web page. If no applets have been run for an extended period of time, the Java web plug-in will deactivate.

Please quit any web browsers and Java applications before installing this update.

See https://support.apple.com/kb/HT5651 for more details about this update.
See https://support.apple.com/kb/HT1222 for information about the security content of this update. (See Apple Docs listing below for specific article.)

System Requirements: Mac OS X v10.6.8"

As with the previous updates IIRC, today's updates from Apple also check for existing Malware and will remove it if found.

I don't use Java but you can check Apple's OS X Forums for feedback from those that do.
(On a related note, reportedly some Macs were compromised due to Java plugin vulnerabilities. BTW: Google safe browsing check (2-19-2013) reported a couple pages (out of 21000+ tested) at Apple.com as suspicious. ("2 page(s) resulted in malicious software being downloaded and installed without user consent.... Malicious software includes 3 virus, 1 trojan(s)"). I wish they included specific pages in their reports. Saw another report on Jan 15, 2013 and IIRC a couple times last year. Some other popular sites have far worse/more frequent cases however.)

Java for OS X 2013-001 (for OS X 10.7-10.8.x)
[Update: Link below was later revised/updated with a later Java 7 version]
"About Java for OS X 2013-001
Java for OS X 2013-001 delivers improved security, reliability, and compatibility by updating Java SE 6 to 1.6.0_41.

On systems that have not already installed Java for OS X 2012-006, this update disables the Java SE 6 applet plug-in. To use applets on a web page, click on the region labeled "Missing plug-in" to download the latest version of the Java applet plug-in from Oracle.

Please quit any web browsers and Java applications before installing this update.

See https://support.apple.com/kb/HT5573 for more details about this update.
See https://support.apple.com/kb/HT1222 for information about the security content of this update. (See Apple Docs listing below for specific article.)

SHA1=145d74354241cf2f567d2768bbd0a7185e7d308a

System Requirements:
OS X SnowLeopard v10.6 or later (incorrect)
OS X Lion v10.7 or later
OS X Mountain Lion v10.8 or later"

Download page also lists OS X 10.6, but I think that's a typo as the "About" doc says "OS X 10.7 and later". (Separate Java for OS X 10.6 update 13 (above) covers 10.6.x and this update is for OS X Lion/Mountain Lion. I'm on a 10.5.8 machine currently and can't check that but it was later confirmed by BDA.) [A few days later they corrected a misspelling of Mountain on the D/L page but OS X 10.6 or later remains.]

Oracle posts Java 7 Update 15 for OS X 10.7.3 and later:
[Update: Links below as of 3/4/2013 have Java 7 Update 17.]
After seeing the Java 6 updates today (above), I checked and saw Oracle's (dev) Java page has downloads of Java SE Runtime Environment 7 Update 15 and Java SDK 7 update 15 for OS X x64 (OS X 10.7.3 or later per their Certified System Configs) and other OS's (cookies required for accepting License Agreement). (For anyone that missed it in previous posts on Oracle Java updates, here's their Java for Macs FAQ.)

Here's a repeat of Oracle's docs for Mac users:
